Why You'll Love It

Most chai-flavored desserts rely on artificial flavorings or syrup. This recipe uses real Assam tea and real spices to create layers of flavor that are warm, complex, and authentic.

The malty richness of Assam tea pairs beautifully with cinnamon, cardamom, cloves, holy basil, pepper, and ginger, creating an ice cream that's both refreshing and comforting.

Ingredients

For the Chai Base

  • 2 cups whole milk

  • 2 cups heavy cream

  • 3 tbsp Laahé Assam Black Tea

  • 1 tbsp Laahé Chai Spice Blend

For the Custard

  • 5 egg yolks

  • ¾ cup sugar

  • ¼ tsp salt

  • 1 tsp vanilla extract

Instructions

Step 1: Infuse the Tea and Spices

In a saucepan, combine the milk and cream.

Heat until steaming but not boiling.

Add the Assam tea and Laahé Chai Spice Blend.

Remove from heat and let steep for 15 minutes.

Strain through a fine mesh sieve.

Return the infused milk mixture to the saucepan.

Step 2: Make the Custard

In a bowl, whisk together egg yolks, sugar, and salt until smooth.

Slowly pour about one cup of the warm chai mixture into the eggs while whisking constantly.

Pour the tempered egg mixture back into the saucepan.

Cook over medium-low heat, stirring continuously, until the custard thickens enough to coat the back of a spoon.

Do not boil.

Remove from heat and stir in vanilla extract.

Step 3: Chill

Transfer the custard to a bowl.

Cover and refrigerate for at least 4 hours, preferably overnight.

Step 4: Churn

Pour the chilled custard into your ice cream maker and churn according to the manufacturer's instructions.

Transfer to a freezer-safe container and freeze for 3 to 4 hours before serving.

No Ice Cream Maker?

Pour the chilled custard into a shallow container and freeze.

Every 30 minutes, stir vigorously with a fork or whisk for the first 3 hours to break up ice crystals.

Continue freezing until firm.

Serving Ideas

  • Drizzle with honey

  • Sprinkle with crushed pistachios

  • Serve alongside warm apple pie

  • Sandwich between cookies

  • Top with a pinch of Laahé Chai Spice Blend for extra aroma

Laahé Tip

For an even stronger chai flavor, brew the Assam tea slightly longer and allow the spice blend to steep for a full 20 minutes before straining. The result is a deeper, bolder chai ice cream that tastes like your favorite cup of chai in frozen form.

One scoop and you'll understand why chai deserves a place far beyond the teacup.
